Después de desalado, se coloca el bacalao en un recipiente con agua hirviendo, pero retirada del fuego. Se tapa y se coloca un paño sobre la tapa para evitar que pierda calor. Se deja así durante 20 minutos.

Después se escurre muy bien el bacalao, se desmenuza en láminas y se le retira la piel y las espinas que pudiera tener. La vianda se coloca en el fondo de un recipiente y se cubre con la leche bien caliente, quedando en infusión durante unas 2 horas.

Entretanto habremos dorado ligeramente cebolla en finísimas rodajas y el ajo, a lo que  añadiremos las patatas ya cocidas y cortadas en rodajas longitudinales. Se añade ahora el bacalao escurrido de leche. Se mezcla todo pero sin dejar que la mezcla rehogue.

El conjunto se pone en una fuente-si puede ser, de barro- y va al horno bien caliente durante 10 minutos

Se sirve en la fuente de hornear,espolvoreado de perejil y guarnecido con aceitunas negras y huevo cocido partido.
